Oats Upma Recipe
I find this recipe absolutely delightful! Even my 5 year old son, Little Nair, who often takes hours to eat, has surprised me and my hero (I am not going to call you that all the time, Mr. Nair!) by licking his plate clean in 15 mins flat whenever I have served him this!
Which is why I have decided to put this recipe up today. It not only makes for a healthy breakfast, but is also delish!
I came across this recipe when Mr. Nair started complaining about acid reflux after eating the regular sooji ka upma. I really cannot recall where I saw the recipe, but I decided to try it out one day. It was an instant hit among the boys! It would seem a bit much when I say that there was no turning back, but, there was no turning back!
We frequently have oats upma for breakfast now. And I have decided to spread the love and bring to you this quick make breakfast recipe.
So presenting, THE OATS UPMA!!
Preparation Time :10 minutes
Cook time :10 minutes
Total : 20 minutes
Ingredients:
1 cup rolled oats or instant oats
1 cup water for rolled oats & ½ cup water for instant oats
1 ½ tbsp oil
1 onion — finely chopped
½ cup mix vegetables of your choice (chopped carrots, peas, beans) — Optional
1 to 2 green chillies
1 tomato — finely chopped (Optional)
Salt to taste
2 tbsps. coriander leaves (For garnishing)
For tempering:
1 sprig curry leaves
¼ tsp mustard seeds
2 tbsps. peanuts/cashews
2 tbsps. raisins
The Method:
1) Firstly, dry roast the oats in a pan for about 5 mins until crisp. Set aside to cool.
2) Now, add oil in the same pan for tempering by adding mustard seeds, peanuts or cashews and raisins.
3) Fry till the peanuts/ cashews turn slightly golden and aromatic.
4) Add in slit green chillies and, curry leaves.
5) Add chopped onions and sauté till it turns golden.
6) You can add the chopped vegetables at this stage and fry for 2 mins. I have added carrots and peas. Add water to cook the vegetables till soft. (Optional)
7) Add in salt.
8) Pour 1 cup water for rolled oats or ½ cup water for quick cook oats and let it boil.
9) Now, mix in the roasted oats to the water. Cover and cook on a low flame till water gets fully absorbed.
10) Finally, garnish the oats upma with chopped coriander leaves.
